Last night's Subway smorgasbord was extremely yummy; I haven't had bread in so long! My boss bought a huge catering platter as a thank you for all the hard work we've been performing, and there was so much food left over that everyone ended up taking a bunch of sandwiches home.
I also made some delicious "healthy" fudge that consists of pure vanilla extract, coconut oil, peanut butter, honey, and cocoa powder. It's high in calories, but I'm telling myself it's good calories. :P
And tonight I'm making mini cheesecakes and topping them with strawberries in preparation for Valentine's day. I'll try and find a slimmed down recipe.
I forgot how much I loved baking. Now if only I could produce delicious baking that is also low in calories! :D
