I am fed up with eggs. I feel like I eat eggs all the time. In fact I wish there was an eggless breakfast out there. And then - I have run out of eggs. Now I am panicking like a headless chicken..oh my god..what will I do..how will I survive? An Atkins dieter without eggs? Thats like saying..hmm...well I cant think of a comparison right now but its not good!

went to the grocery store yesterday to buy some eggs but with a two year old going.."I want that' "I want that" and me going "put it back honey" "put it back sweetheart' 'PUT IT BACK RIGHT NOW!!" throughout the entire store, I came out with a couple of bags of groceries but no damn eggs.

I did find Macadamia nuts, which I was beginning to think were non existent so I got something out of my trip last night.

So my breakfast this morning? Macadamia nuts of course. They are quite heavy and I have a stomach cramp and a headache, which is good because I could have easily eaten the whole 4oz otherwise! Stopped in the nick of time!

I make myself a vanilla protein smoothie every morning. It's quick, easy and I can sip on it while I get ready for work. Here is how to make it: Place the following ingredients in a blender: 1 cup water 1 Tablespoon ground flaxseed 1 Tablespoon high lignan flaxseed oil (I use Barlean's) 2 Tablespoons heavy cream 1 packet sweetener (I use Stevia Plus) Cinnamon to taste (I use about a tsp) 1/2 tsp vanilla extract 1 scoop low carb vanilla whey protein powder Blend in blender. Add ice cubes until desired consistency is obtained. I add 8 ice cubes and it comes out just a bit slushy. This smoothie doesn't get real creamy because it is water based, but it tastes pretty good and is only 1.8 net carbs!

I know what you mean. I can only take so many eggs. I like having the Atkins Peanut Butter Chocolate meal replacement bar with coffee for breakfast. It keeps me full for a loooong time. And it tastes great!

And it's only 2 net carbs :)

I agree that a smoothie (look for a recipe that IS a nonwatery consistency...texture is important!) is a great alternative..add berries!...and the Atkins bar..or the EAS AdvantEdge Carb Control Bars are even nicer with coffee! They'd better be nicer with 4 gm net carbs :) You can also have mock pancakes with s/f syrup and lots of butter! How about meatloaf? There are also low carb muffins using flax that I hear are very tasty! I meant to try them..then fell off the diet wagon..

Check out my recipe for an Atkins protein shake in the kitchen. You can mix it up and change the ingredients. Sometimes I can't do eggs either. Sometimes I just eat bacon and sausage for breakfast. I really need to go shopping! Don't do the Atkins bars until you figure out if they stall you or not. They stall me. Cream cheese pancakes are another favorite. They have eggs in them, but its more about the cheese. 3 oz cream cheese, 2 eggs, 1 tsp cinnamon. Blend until not-lumpy. Cook on medium heat 4 minutes on one side, 2 on the other. Top w/ s/f syrup.
