So I had this brilliant idea to try water with a tablespoon of lemon juice and a few drops of liquid stevia and I loved it!! I think I am starting to find my legs so to speak with this WOE. It's not at all about everything you are giving up, it is about all the healthy ways you can eat what you can, And, being creative with it. Then, add weight loss, energy, and all around better health to the mix and how could I possibly want to go back??!!

So happy for you finding those legs!! LOL! And you're so right about how to think about it! In the big scheme of things, there's really not a whole lot that I'm giving up. I can basically eat the same meals that my family eats, just without the starchy side dishes. They are constantly amazed at what all I CAN eat and at how good the meals are that I make for myself. Very proud of you for hanging in there! :D

You are finding your way dear -- I hear it in your words. Betting that water tastes wonderful -- I always ask for lemon or lime wedge in my water with a restaurant meal. I do not want to go back to drinking diet soda pop and although I love iced tea, it surely isn't equal everywhere so having the water with a little extra makes me feel like I am getting something special :)

I agree with you 100%, as I'm always figuring out ways to reinvent family favorite dishes, and even new or interesting dishes, I find on the internet, to make them more compatible with the low carb lifestyle. Congratulations on finding your legs. :-) I think you'll also find that even the people in your household will enjoy the modifications you come up with. My brother happened to stop by the other day, while I was in the midst of making one of my low carb pizzas for lunch. I encouraged him to try a piece, once it was done, and he agreed, it's tasty enough to keep anyone from making that call to the deliveryman, or making that stop to get a couple of slices at Costco. My sister has tried my soups, chili, and even my fauxtato salad, made with turnips, instead of potatoes, and even asked for seconds. Now that you've found your legs, keep them warmed up for the fantastic journey, that's ahead of you; and be blessed all along the way. :-)

Thank you all so much!! and, ShyGuy I love the fauxtato salad idea, maybe you could post the recipe. I have made a recipe folder on my computer that I have been adding all my new found low carb recipes to try. It's actually exciting!! I love to cook! I am staying pretty close to eggs and lettuce :) but I am loving the idea of trying new things. I just never thought I could do that and be "dieting" but that is part of the "old mindset" and I am not going back there! lol

It is important not to feel deprived and be craving foods so you are exactly right. Finding ways to make your favorite food fit into your WOE will help to set you up for success.
