Mexican style meatball casserole with brown rice/ quinoa, pigeon peas, enchilada sauce and cheese. It taste good. Just needs some jalapeños.

I just put pre made meatballs over brown rice and pigeon peas. Covered with enchilada sauce and cheese and baked.
