Dinner last night was Japanese-themed at our house. Hubby brought home sushi and miso soup cups from the grocery store (we have a nice one near us that prepares sushi and sashimi fresh) and we had edamame in the freezer.

The big crunch roll was from a package that served two, so we split it. The other pack served three, but I had less than a serving in the three pieces pictured. It was very filling and fun to have a variety of food to eat. Total calories for what you see pictured was 512 calories. I added on almost 200 more calories later that night eating really good cherries hubby brought home from Costco. Kept within my RDI for the day, too!

Oh man Sushi and Cherries!! Damn Keto diet!! Lol

Yeah, I know myself and Keto isn't for me :) I'm trying to keep my overall calories below a particular number as well as balance my protein/carb/fat. So far fat seems to be winning, which is why I'm investigating more plant-based proteins. I love me my cheese!
