I'm still really enjoying my vegetarian journey. I've decided that on the road to veganism, I will start by being 100% vegan every other day. Today is a vegan day, and here is my menu:

breakfast: 12 almonds, 1 banana

lunch: 1/2 cup brown rice, 1/2 cup beans (organic bean trio, canned), a dash of salsa, 1 cup fresh broccoli; apple for dessert

dinner: what I was supposed to make last night! Mexican Edamame, Mint Zucchini Cherry-Tomato Saute, steamed greens w/ extra virgin olive oil

snacks: 5 cups air-popped popcorn w/ 1 tsp evoo and some sea salt, 1/4 cup raisins

I will also be doing 90 minutes of exercise, 30 at Curves (circuit training) and 60 at home on the Gazelle (cardio).

Diet Calendar Entries for 09 April 2010:

I think it's great that you're on the road to becoming a vegan. I'm currently vegetarian, but I was vegan for 5 years. I'm having some conscience issues and I think I'll go back to vegan soon though. Thumbs up for animal lovers!

I think that that is a wise approach GG. It's hard to remain 100% vegan (for me at least). On the other hand it's easy to maintain for short periods of time. One thing that the vegetarian approach will teach you is how to become a real pro with preparing vegetables. Sometimes I believe that the reason that there aren't more vegetarians in the world is becuause people simply don't know how to deal with them. Of interest to you might be the foods of Southern India, Arabic food, and raw food diets to mention a few things that are compatible. Good job, keep it up, and thank you for your encouragement on my journal.
