I was able to walk again today - in between the rain showers the sun came out brightly for about 45 minutes. It was long enough to walk for 30 minutes up and down the hills in our neighborhood.
I made a quinoa salad today and it tasted great. I ate so much quinoa when in Peru and Bolivia and really enjoyed it. The Andeans seemed to put it in everything. They have a puffed quinoa cereal I cannot find in the US. I only have found quinoa flakes cereal. It is a tasty supergrain alternative to rice and couscous.
I also was able to budget calories so I could have a small turkey Subway sandwich tonight since my husband wanted Subway. This is good because it means I can modify my choices and not feel "deprived" of my favorite foods.
