Happy Monday all. I hope everyone had a good weekend. Mine was pretty quiet, although we did take the pups to the dog park. They love it there. TOM arrived yesterday, so I am not changing my weight since I know it will go up a bit for the week. I didn't eat well over the weekend. I was crampy and that always affects my appetite. I skipped a couple meals, so my carbs and calories were both down. I did try the MIM for the first time and was pretty impressed. Slathered with butter it really hit the spot.

Happy Monday!! I actually bought the flax meal yesterday and I am dying to try the MIM tomorrow. It sounds so yummy! If you have a weak spot for mashed potatoes like I do you have to try mashed cauliflower with sour cream and garlic-it tastes so good and a good replacement for mashed taters. Tried this yesterday and even tricked my boyfriend and a friends boyfriend into eating them. We all loved them. My weekends tend to be a little tough too for me-I spend so much time with my boyfriend and his eating schedule is crazy so I've learned to use the shakes or a bar for when a meal is scheduled but we are not going to be eating at that time. Works so far. Good luck this week!

Good luck to you too! I made a MIM this morning with cinnamon, but it came out kind of dry. The ones I made over the weekend were much better. The only difference was I used vanilla extract in place of the cinnamon. I think I will stick with that because it turned out much better. I also use coconut oil instead of butter. Let me know how you like them! I haven't tried the mashed cauliflower yet. I have been meaning to though.

Loooove mashed cauliflower. Love. The kid scarfs it down too :) And the MIM is a wonderful treat. Who cares about the calories? Its so good and good for you! I add peanut butter to mine all the time. Tried almond butter once and that was nasty but thats the most I've experimented with it. Vanilla sounds interesting, and the coconut oil instead is an idea too. I don't bother with the splenda when I use the peanut butter, but I generally add a bit more salt.
