We just finished dinner. I made a blueberry cobbler and OMG> Instead of white flour I used half a cup coconut four and half a cup soy flour. so really cut the carbs down, and it was awesome. 1 stick butter melted. 1 cup powdered stevia half cup soy flour half cup coconut flour half teaspoon baking powder 1 and half cups of almond milk. cup and a half blueberries. bake 350 for 45 minutes. If you get a craving, it was good. had some no sugar added vanilla ice cream on top. breyers. also had salmon patties made with the coconut flour and a little almond flour, a egg and chopped onions. rolled in to patties and deep fried.
