So, I need your help. My husband really wants to get in better shape. Here's the rub: he is the pickiest eater I have ever met. He doesn't like vegetables and most fruits. Like none, other than the small side salad he has before every dinner....and it's hard to get him to try even things like quinoa or any type of beans or yogurt. He's like a meat and cheese and potatoes kind of guy. I do most of the cooking and since he doesn't eat them, I tend to make the veggies on the side or make a vegetarian version of whatever I'm making for him for myself. I need some recipes! I do have that cookbook where you hide vegetables in things but he said he can taste it. Ugh!! Any ideas, kiddos?

I find that I eat a lot more fruit when we cut it up in advance. We keep a fruit bowl in the fridge. If you get him on FS he will see what he is eating. Start up him an account and let him compare your intake compared to his...

Why not have him do Atkins or South Beach? Supplement it with exercise, and he'll definitely see changes.

who needs cookbooks in this day and age - you have the Internet! Now here is my suggestion, God knows you already have more than enough - just give him what he wants. Really what is wrong with steak & potatoes and a small salad? It's my favorite meal. Just remember, one person's trash is another person's treasure.

Minus the potatoes it sounds like a low carb diet would best suited. A pointer on really low carb: slowly take the carbs down to 20g (key being slowly as it won't give him intense carb cravings. Hold at 20g for as long as possible then slowly bring it back up but try to keep under 40/50g for as long as possible. You could also consider a 'decent' carb day (cheat day) a week to keep the car. By decent I mean potatoes, preferably not crispy cream and white bread.

The Skinny Taste Cookbook, and the Dash Cookbook excellent cook books that can add a twist to the foods you already like to eat. Take look and see if these can help you introduce the food a little differently and a little bit healthier. I recently read a book by Jillian Michaels called skinny for life. One the suggestion was to get a blue dinner plate and eat of it as the color blue tends to limit the amount of food you eat. Just a few suggestions.
