All the above but my favorite way to use it would be to make a curry. Add lots of veggies and protein of choice... chicken/chick peas. With or without rice.

I usually put the open can in a Ziploc bag and place in the refrigerator until moldy, then discard into trash.

One of my favorite deserts is a 1/2 cup of pumpkin with a 1/2 pat of butter and a tsp of Pumpkin Pie spice. Stir it together and microwave for 30 secs to a minute. Tastes like pumpkin pie without the guilt.
