Baked salmon patties with sushi ginger, sauteed kale, onions & mushrooms, quinoa, and canned beets. Really hit the spot!

I love that pale yellow to pink pickeled ginger, & this sounds & looks scrumptioue. Personally I'm not thrilled with fresh salmon, but can't get enough of the canned. What a genius way to get omega 3's, with delicious patties, please put the recipe next time, 😋.

Recipe: start with one 15-oz can salmon, drained, and mush it up in a large mixing bowl. I use the stuff with the bones and skin and just leave them all in. Won't hurt anything, and the bones supply some calcium (they're soft enough from canning they won't hurt you). Don't worry about a little liquid even after draining, either. Add 2/3 cup uncooked old-fashioned oatmeal, 2 eggs, a splash of lemon juice and whatever spices suit your fancy. (Don't use salt. )Mix everything together, then let sit a few minutes to allow the oatmeal to soak up the liquid a bit. Line the bottom part of a broiler pan with baking parchment paper Use a 1/4 cup measure and form patties. I typically get 8 patties. Put pan on the bottom rack of a preheated 425 degree oven. Bake 10 minutes, then flip over and press down a little. Bake 10 more minutes. Done! Easy-peasey!

I had no idea this post would become so wildly popular. 😉 I hope those of you who try/have tried it enjoy/enjoyed it. Salmon patties are one of our favorites. We've also been known to top them with sauerkraut, plain Greek yogurt, or guacamole. Particularly good is mixing yogurt with mustard and horseradish to top them with. Happy eating! 😊

I made these salmon patties but tweaked it a little. Added chopped celery, mushrooms and red onion. They were delicious!

One thing I sauteed the celery and red onion until translucent and used 1/3 cup instead of 1/4 because there was more after the additions.
