So, while I have done pretty well sticking close to my RDI and cutting out meat and dairy from my diet, I realized after a lot of reading and research, that I have simply replaced those things with highly processed "faux" substitutes. This has helped me shed a few pounds simply because they are ususally lower in calories, but I don't just want to lose weight, I want to be healthy. For that reason, I think I need to concentrate on eating cleaner. I love fruits, vegetables, grains and legumes and I want to concentrate on eating those things instead of fake meat and cheese and a ton of condiments. I was a vegan for a few years and I always felt so much healthier, but I now realize that I felt healthier because I was 40 lbs lighter and more active, not neccesarilly because I wasn't eating meat dairy and eggs. Looking back I realize that I had just replaced those things with fake versions, and thinking about that makes me feel kind of gross. This all came about after I ate a bagel pizza tonight with vegan "cheese", and for the first time I felt like I was eating plastic. Yuck! (even if it tasted good). So, moving forward, I am going to try and cut out processed foods and eat more whole foods, and stop concentrating on trying to catergorize or label myself.
