I am right there with you - the guts are the BEST. I like to bake the filling in some of those small glass Pyrex or Anchor "custard cup" style storage containers so I have little individual pumpkin custards sans the crust.

One of our local restaurants makes a pumpkin pie burrito. I avoided for years. Turns out, that was a mistake and it’s quite tasty. There’s likely some merit to the sausage idea. I’m probably going to scrape the guts into a container today. Not enough room in my fridge.
