Today was DH's work luncheon in honor of Thanksgiving, and everyone's family was invited. He and I both worried that there might not be a lot of Atkins-friendly foods there and, unfortunately, we were right. Out of the vast expanse of food, there was one plate (!!) of chicken that looked as if it had been cooked in a straight-forward manner. Everything else was battered, fried, had various sauces and marinades on it, or had non-Atkins-appropriate ingredients. Pretty slim pickin's.

Luckily, our own contributions to the day were a spinach pie with turkey sausage and pancetta-wrapped asparagus spears; recipes right off this site. To all those who gave me menu ideas in response to my post, thank you, and don't despair...I am keeping those recipes in reserve because DH's work does this all again at Christmas!! With our own contribution to the luncheon and a few pieces of plain Swiss cheese, we actually had a very nice and totally Atkins-friendly lunch! Only 1 piece of the spinach pie was a leftover to take back home.

The spinach pie recipe is positively AWESOME!! It will be a mainstay for me in the future. I added the turkey sausage, but reviewers stated they'd added chicken and other meats as well.

I feel like I've spent all my free time today in the kitchen. I used fresh spinach for the spinach pie, but frozen would work as well and be a lot less labor-intensive. When we got home from the luncheon, it was time to begin preparing the foods I could do ahead a bit for tomorrow. Fresh green beans got cleaned, almonds got toasted, Stef's pumpkin caramel cheesecake got made (batter was YUMMY!!), and the turkey's all set to go....cleaned, seasoned, and in the roasting pan now put away in the 'frig.

I called various relatives tonight to wish them a Happy Thanksgiving. Not that I couldn't do it tomorrow, but we seem to have more time to talk on the day before a holiday, even though it can be busy too.

Sandy, I am so glad that you had a great time at the luncheon. Thank you to your hubby and to you, for your service to our country. I hope that you have a wonderful Thanksgiving. I got the peppers cleaned tonight, and the salad made. Will finish up tomorrow!
