Water weight hung on this weekend with salty food and carefree eating. 4 lbs on the 4th was quite a shock! Back down 5 today, so that’s a welcome relief 😁 These are Pork Belly burnt ends. Not bad for a first try. New smoker arrives Friday! Look out!

The current smoker is pretty small and there are holes in the grease drain plate. Caused a bit of a flare up the last two times I smoked. I was able to save these little piggies. If I keep eating like I did last weekend, I’d definitely hit 500!
