Been reading up on the benefits of Cocoa. Apparently its a 'super food' and is the highest antioxidant available in raw food. The next highest is dark chocolate, then kale, then broccoli I think. Anyhow, If you get two tablespoons of raw Cocoa powder worked into your diet a day, you will have nearly 3000 ORAC (the acronym for “Oxygen Radical Absorption Capacity”). The SAD diet (standard american diet) gives you an average of 1400 ORAC, and its recommended to intake 3000-4000 ORAC a day. So, there you have it... Eat chocolate to fight cancer and all kinds of other diseases! If you blend one tablespoon of Cocoa into your food during the day, you will meet the requirement most likely. I put it in my morning shake today :)

I'm making raw vegan "Facon" Bacon today. Its thinly sliced eggplant marinaded in Smoked paprika, salt, maple syrup, grapeseed oil, apple cider vinegar, and pepper. Been dehydrating all night. Also made a batch of raw katsup. Cant wait to try that! I'm soaking almonds to make a probiotic raw almond "cheese". I am still looking for a good recipe online.

The "Facon" turned out ok. It dosen't resemble the taste of bacon so much as I'd liked, but its good in its own way. Very crispy, kinda sweet and salty. Like eggplant jerky or something. My next batch I think I will try my own concoction of marinade and see if I can get it more like bacon. The almond cheese, however, turned out AWESOMMMMEEEE!!! I am in love with almond cheese...lol. This stuff was slightly like ricotta in texture, maybe a bit smoother, and dry enough to mold into a cheese wheel. I dehydrated some fresh chives, sweet red peppers, 1 garlic clove, and 5 or 6 cherry tomatoes sliced in disks, then mixed them up in the cheese to give it a garlic herb flavor. Wow. It was fantastic.
