Breakfast is a pain. I went through the Atkins cookbook and most of the recipes *still* expect you to either use a form of low-carb flour or low-carb bread?! How about teaching us something useful instead of requiring us to buy specialized foods? I'll have to browse the recipes I have and the ones here. Any recommendations for breakfast that is savory and doesn't require artificial sugar-free additives and specialized ingredients?

I made hollandaise sauce last weekend and put most of it in the fridge to enjoy throughout the week. I used it to top eggs, spinach and smoked salmon. It was a supreme breakfast! Spinach frozen in little 1/4cup chunks is really easy to defrost in the pan. Add a little oil after that and the eggs, or remove spinach from the pan and then cook the eggs as you wish. I am thinking about trying the egg crepes (but for now I won't because I do not want to be tempted to use syrup) and the flax muffins in a minute. I have collected these recipes from the website.

I notice in your diet calendar that you use bacon fat but you don't eat the bacon. Adding some meat and cheese into your breakfast might spice it for you. Pure foods are always preferable on Arkins to some of the things included in the cookbooks.

I had cooked some bacon a while back so am just using up the bacon fat for the flavor. I didn't want to waste all that good bacon flavor! Honestly, though, I have to watch my intake of things like bacon and deli meats because of the sodium content. Eating low carb and low sodium together is difficult but it's going pretty well and I'm able to get my calories in without too much trouble so far. Thanks for the hollandaise idea.. I'll be sure to give that a try!
