I've always liked eating with chopsticks, and find that most simple, traditional pan-asian cuisine suits my diet very well as long as I mind the rice intake. Of late I simply take whatever meats or fishes I feel and marinate them in light sauces, garlic, lemon juice, whatever strikes my fancy, kept in individual plastic bags labeled by flavor. Stick them on a skewer and 10 minutes on my countertop hibachi ($30 at H Mart) nets me cost effective yakitori (or kababs as you will) in varieties limited only by my imagination. Sometimes I eat them over steamed veggies, in a salad, wrapped in low-carb flat bread with lots of greens, with seaweed salads...you name it. I rarely break 400 calories per meal and its almost all protein, simple carbs. There's portion control but what I love best is the chopsticks.

They make me eat more slowly, it's really hard to gobble when you can only pick up 1-2 small pieces of food at a time. I take the time to appreciate, to taste my food more than if I'm shoveling it into my mouth. With low-fat/sugar/sodium sauces and seasonings, each bite can be different, and because I'm taking my time I can taste every mouthful. I don't know that I can eat this way all the time as I *do* get bored and love my carb splurges, but I think I may have found my general *default* diet. :-)

I went to Benihana for a friend's birthday Sunday and you can see the ratio of protein to carb is almost equal, but both are eclipsed by fat and sodium. I had grilled chicken and steak, veggies, steamed rice...almost exactly what I had for lunch today but the difference between restaurant and traditional preparation definitely expose that not all Asian cuisine is healthy! Its amazing to me, every food has it's own taste and they can certainly be complimented, but I'm always happiest when I can really taste the food itself.
