Ingredients
Directions
- Put first four ingredients in a large soup pot and sauté until tender, about 10 minutes.
- Stir in remaining ingredients and bring to a boil, then reduce heat and simmer for 20 minutes.
- Puree in batches in a blender or use a stick blender to blend until soup is smooth.

Reviews
I made a half of batch and got 6 cups of soup. Easy can make 3 servings. It was very easy to make and the smell was amazing. I used water instead of broth to cut down the sodium intake. I think next time I will use a little less water, about 1.5 cups instead of 2 cups to make it thicker. Definetely will cut down on ginger - maybe half of the amount recommended. A dollop of fat free plain yogurt or sour cream will go well with the soup.
