These were fun!
I made this years ago. the original recipe was higher in calories, fat AND sugar so hubby and I tweaked it enough to fit into our life.
Today we made strawberry/almond with vanilla cream protein powder.
Since our goal was to reduce fat and sugars, we use unsweetened applesauce.
Our other goal was to use flaxseed for its benefits as well as protein.
The other sweetness in this recipe is from the fruit and protein powder.
If you make this and would like a sweeter taste, you could add a sugar alternative or honey.
I can't wait to make different profiles. On our list:
blueberry/almond
pumpkin/nutmeg
apple/cinnamon
coconut/pecan
cranberry/walnut
For the Strawberry/Almond recipe I provided the nutritional data (also in my cookbook here)
This recipe yields 8 servings. I usually bake in a 9x9 pan but tonight I used a normal sized muffin tin

Sharing another recipe. I made this soup a couple months ago but today I used more veggies.
Its my own recipe and I'm calling it Oriental Shrimp Soup:
Shrimp sauteed in Mongolian Fire Oil
Add green onion and toasted sesame seeds
Sprinkle 1 tsp Chinese 5 Spice and tbsp parsley flakes
1 carton low sodium, less fat chicken broth
a few dashes of soy sauce (this is why I use low sodium broth)
1 can baby corn + 2 cups frozen oriental veggies (I used Kirkland's Best)
Simmer for 30 min
Add 1/2 box Rice Noodles (I used Thai Kitchen Stir-Fry Noodles)
This soup has a nice, clean broth that is not oily at all. The heat is pronounced with just the mongolian Fire Oil. Not too spicy though - so those who are sensitive will still enjoy it!

Sharing a recipe! So simple, fragrant and delish!
Today was a day in the kitchen. One of the dishes I prepared was Coconut Curry Shrimp:
Shrimp sauteed in sesame oil, red onion, sugar snap peas, toasted sesame seeds
few dashes of curry powder
1 can unsweetened coconut milk
simmer for 30 min.
Will be served over sriracha/teriyaki rice (also my recipe)
