I have been sick this last week so I haven't logged in my meals nor have I been strict with my calorie count...just eyeballing things. I know that I may have gone over some of the macros but I am giving myself the time to get better. I haven't fallen off the wagon...no way. I think I am feeling strong enough to head out to the gym tomorrow. Tomorrow is my once-a-week weigh-in and I know that I will be down the 2 pounds as it seems to be my pattern, but I don't yet see the weight I've lost (and I know it can't all be water weight) Actually, my son is home for his easter break and he hasn't mentioned anything about my 12-pound loss but thankfully for FS I have diligently recorded my weight and I KNOW I didn't just make it up. Happy week to all.

It is working....my hard work is paying off. This will make it a 10 pound loss since taking back my health. I am immensely proud of myself for really sticking to the gym and to my diet. This week coming will be a bit challenging for me because my son will be home from college and he loves all the yummy foods that I used to make. I will still make his favorite comfort foods but I will put everything I've learned over these years into practice...and that basically is portion control and basic self-control.

Bad food planning today made me go over my calories and still left me a bit hungry. Better tomorrow :)

Who knew you could have healthy french fries? Well, I'm calling them healthy. I made french fries out of one medium-sized russet potato and tossed them in some salt with only a 1/2 tsp of oil then I oven fried them. They were just perfect. I did spray the cookie sheet with non-stick spray but next time I don't think I will bother doing that because there was plenty of grease floating around the pan. Also, I will let them be completely dry before coating them with the oil. I was too hungry to take a pic but next time I will....so now I can cook my french fries and eat them too...who knew?
