Day 4 on lectin free WOE and day 2 of prebiotics -- I feel bloated and bowels are not moving fast to eliminate weight.
The food is good, but I added some meat proteins today to keep from being hungry. Hope Day 5 tomorrow is a turning point. I'm impatient to lose weight and start feeling better, have more energy!
Going to keep going 25 more days...regardless.

Day 3 - started prebiotics (powder in water)from Dr. Gundry before my pretty breakfast of Green Veggie Hash with 3 strips of bacon. (Actually bacon was not in meal plan for today, but wanted to add a little more protein to the meal.)
Now my stomach feels really over-filled and gurgling. Should stick to the Lectin free Week 1 plan the rest of this week. I was just really hungry yesterday, and last night I ate almond flour crackers and Alouette to stop hunger before I went to bed a few hours later.
Is this a thing--hunger during first week of lectin free diet? Will do more research today, and keep trying to stick to the plan.

We'll see how tomorrow Day 3 goes.

Starting a new WOE today -- lectin-free from Plant Paradox, Dr. Steven Gundry.
Very excited about this 30 day challenge to reclaim my health and lose weight.

Am doing something about my recent weight gain--looking into Dr. Steven Gundry's Plant Paradox theories of weight gain, especially as we age.
Doing research on Non-Lectin way of eating(which eliminates lots of veggies I normally consume), but his theory about lectins & the digestive tract resonates with my digestive history/problems.
So I'm going to give it a shot, non-lectin diet and increased prebiotics to aid my digestion should help. Just removed "No" list items from my kitchen pantry and moved them to my storage pantry--good-bye pasta, rice, beans, sugar, flour! Moved "Yes" list items from storage to kitchen pantry, so I can see and use them more frequently--hello again Stevia, coconut milk, Asian spices, curry, canned beets, etc.
Now on the hunt for simple, basic non-lectin recipes to ease into Dr. Gundry's "diet". This is exciting! I feel like I'm on a safari in a jungle of foods! Let's go!
