Trying to add some variety to our keto diet, have been trying a LOT of recipes from the internet; some winners, some WTH were they thinking!?!?

Cauliflower: still no way in hell this stuff can be made to taste good - yikes!

Someone suggested to me that Daikon radishes were "neutral to peppery" tasting and could be made into reasonable mashed potatoes or subbed into my desired 'veg beef soup' - yeah, not. If you like radishes, yes, its a milder version from the red/pink ones you see commonly.. resembling a potato? - NOT!! I tried mashing them with cream cheese, HCW, cheddar cheese... NOPE - even my husband who is a pretty good sport about trying new things (and he actually likes veggies) that they tasted ok but no way did the stringy texture come anywhere near potatoes (he DOES eat cauliflower as "mashed potatoes).

Still losing slowly but steadily... would love to get down one more pant size - then I can get into my "one year" pants... you know, the ones you put away for a season and think, "I'll lose some weight and be able to wear this next year..." (Not even going to tell you how old a couple of my favorite pairs are... but it involved pregnancy and my youngest will be 16 next month!!) - I've had brief periods where I could wear them but 2 pair are virtually new and I would love to get into those with my boots (which are still too tight at the calf for now) <NSG>.
266.0 lb Lost so far: 5.0 lb.    Still to go: 86.0 lb.    Diet followed reasonably well.
