The frustration continues. Even though I ate foods that weren't the healthiest choices this week I still came in below calorie goal every single day. I looked up some of the diets suggested, but they all cut out foods that I cant live without. During the week I am a vegetarian, which is what I consider ideal, but because of certain medication that I take my dietary choices are severely limited which would make those diets nearly impossible.
242.6 lb Lost so far: 57.4 lb.    Still to go: 112.6 lb.    Diet followed reasonably well.

If you're talking about the LCHF diets. They can be done vegetarian. It's more difficult. If you're body is sensitive to gluten, breads, or grains, it can inflamed your digestive system. Could you try a diet of non root vegetables (raw or cooked in olive or coconut oil) and low glycemic fruit (berries) for a week? I don't eat much meat and I know I lose weight and digest things better when I avoid grains. When I eat them I can sell up quickly with 10 to 15 lbs of water weight. Is any of that something you can do?

Well, calories in/calories out fails at a certain point because your body adapts to the lower input. At the end of that road, people gain weight on 1200 calories per day. To keep your carb heavy diet and lose weight, you can try intermittent fasting. Eat within a six hour window each day, or eat every other day. You can add more fat with nuts, nut butters, ghee, coconut oil, olive oil. Your food looks delicious.
