considering I went AWOL on my health these past couple weeks, I'm really grateful I only gained 1 lb! It should have been so much worse, but I'm glad its not, now I can just pick up where I left off!
Went for a walk this morning, brought my 11 month old son with me for a change. Got him all bundled up, because apparently Arizona here has finally realized its Fall and decided to be frigid this AM. :D I just had a tshirt because i knew I would heat up quick, and I did. He ended up falling back asleep while I talked on the phone with my mom. I really enjoy the ear plugs that come with the phone. I discovered them when I first started walking in the morning, so that I could listen to music and zone out, not paying attention to cars and noise, so nice. But it works well when talking to someone too, I don't need to hold the phone to my ear while walking...nice. :D I know, I'm slow, most people have already discovered the worth of bluetooth, I tried the earpiece, but it never stayed correctly on my ear, so I like the earbuds that plug in, they fit good. :)
So...back from my walk, layed my lil boy back in his bed since he crashed again, my 3 year old is watching the Backyardigans, got a bowl of cereal and my version of a dunkachino (coffee and a hot cocoa packet, yum!) and getting back on track. Just trying to think of what I should do today....maybe a walk to the park? swimming is out...LOL Unless I want to join the Polar Bear Club, but I'm all set on that one! I don't even like cold showers....
Anyhoo...missed you all, I'm excited to be back in the right frame of mind, just in time for the holidays! HA! I might have a reeses or 2 on halloween, they're my fave. But I'll be good... ;)

I have a question, maybe someone can answer it. I've been baking a little and been using splenda instead of sugar so I can feel a lil less guilty. It says it measures the same as sugar, but the cookies and muffins I made came out rather dry. The cookies didn't melt into a cookie shape either, just stayed as a lump, but cooked. lol They were still really good, just wondering if I'm doing it wrong ? Anyone else encounter this? Or did I just mess up the recipe? LOL

I don't bake with splenda but maybe you could use a Splenda specific recipe instead of a regular one?
