I've been going off the diet quite a bit. My definite problem is that it takes so long when I come in from work to fix a filling and healthy meal that I just eat what is quick (like sugar-free pudding and lite cool whip). Very miserable, too many calories too much of the time. ALL my own fault. Also since I moved last, I can't find my George Forman grill which made my life amazingly simple when cooking on this food journey. Yesterday was Sunday so I cooked fried squash and eggplant (not together) in a pan coated with olive oil and then baked turkey meatballs. I added a little homemade spaghetti sauce to the eggplant and melted parmesan and mozzarella cheese over the top. I even made enough for todays lunch. That's what I need to do every Sunday. It was delish, as Rachel would say. I don't give up.
