Up to 54.5 miles for the month of April. My leg has FINALLY healed enough to let me jog on it! :3 And Boy do I Enjoy the feeling! Also down to 254.5lbs today. ^.^ Yesterday morning I was 257.5. O.O Soo lots of water, and lots of peeing between yesterday and today. :P I'm hoping to break into the 240's by the end of the month. Not sure if it'll happen with Easter right around the corner. I can say walking in 88 degree weather with the sun trying to roast you will make you Sweat, but after 2.5miles I was done. Started getting dizzy from the heat and started to get dehydrated. Summer has started Early this year in Florida. And it is going to be HOT!

Made Pineapple Teriyaki Pork chops last night with stir-fried mixed veggies and white rice. ^.^ Turned out pretty delicious.

Pineapple Teriyaki Pork Chops:

Olive oil in a sprayer(not store bought spray that contains propellant)

4 (4oz) trimmed boneless pork loin chops (3 1/2-4 1/2 oz chops are okay), about 3/4 inch thick

1 teaspoon garlic powder

Salt to taste

Ground black pepper to taste

8 teaspoons honey teriyaki marinade and sauce (this is not a simple teriyaki sauce-I use Ken's steak house marinade and sauce)

4 slices canned Pineapple slices in juice, drained


Pre-heat the broiler. Line a small baking sheet with aluminum foil and spray foil with olive oil.

Lightly mist both sides of the chops with olive oil and season with the garlic powder, salt, pepper. Place the chops, not touching, on the prepared baking sheet and broil about 3inches from the heat for about 2 mins. (be sure to leave the oven door cracked when broiling).

Turn the chops and brush or spread 2 teaspoons of teriyaki marinade evenly over the top of each. Top with pineapple slices. Broil for 3 to 5 mins longer, or until the pineapple and glaze brown lightly and the pork is barely pink inside. Serve immediately.


Changes:

I used olive oil spray from the store, fresh pineapple instead of canned. And I made my own honey teriyaki sauce by mixing Kikkoman's teriyaki sauce with a bit of honey. I also used my Citrus pepper grinder seasoning instead of just regular pepper. Oh and since my siblings brought me some pork chops from their farm, I used those instead of pork loin and cooked them til they weren't pink period in the center. I have a thing against meat that isn't cooked all the way through.

Suggestions to anyone making this recipe. Let the pork chops marinade in the honey teriyaki sauce before cooking. You could taste the flavor of the sauce and pineapple. But it was very subtle and I was hoping for a little more Umph! from it. I also mixed up a little extra honey teriyaki so I could add a little to the stir-fry I made. It was quite delicious. The salt can add up with marinades like that though, so Lots of water/ hot green tea with dinner. ;) Sorry for not having a picture, but my camera is currently at my friend's house, I really need to see if she could ship it to me.

Grocery store for Bananas, apples, and oranges. Maybe some grapes too if they have any good ones.

Might get in mini workout this afternoon too when Jules takes her nap as well.
