I heaaaar you hard. I'm a PhD student so in the awkward position of being a teacher and a student simultaneously, and this virtual thing is insane. The normal boundaries of "Ok, I'm physically out of the classroom, I can focus on something else now" are gone, and it's wreaking havoc on my psyche, haha. I've found a deep love for one-pot pasta dishes - I make one on Sunday, and portion it out into 5 portions so that it lasts the week. It's been a lifesaver - like meal prepping, but without investing hours on a Sunday, haha. If this fits in to your diet, I'd totally recommended it.
