I'm mystified why this is happening. I'll stick with the diet and beat this down.
296.2 lb Lost so far: 34.8 lb.    Still to go: 173.2 lb.    Diet followed reasonably well.

990 kcal Fat: 31.37g | Prot: 70.83g | Carb: 75.15g.   Breakfast: Mozzarella shredded low moisture part skim cheese, Lite Honey Mustard Dressing, Melba Toast Wheat, Canadian Bacon, spinach and veggy mix salad. Lunch: Canadian Bacon, spinach and veggy mix salad, Honey Mustard Vinaigrette, Lite Honey Mustard Dressing, Mozzarella shredded low moisture part skim cheese. Dinner: Tilapia (Fish), grapefruit, ruby red, whole. Snacks/Other: tomato, Roma, raw cut up, nonfat cottage cheese 3 oz, Cheez-It Original Snack Crackers. more...

Well, if you are honestly tracking all your food and not overeating, then you know it must be water weight from something. Are you taking in too much sodium? Are you taking any medications? Have you been sick lately? Is it that time of the month? Hormones? Sore muscles from exercise? Could be caused from many things. Make sure your drinking water to flush out sodium and keep things moving.
