Sodium in ramen is very high. Some people are more sensitive to sodium than others and you can retain water pretty easily. Our bodies are made up of 60% water so it's easy to fluctuate on the scale hourly. You know you didn't over eat by 7000 calories, so drink some extra water today to flush out the sodium. Any kind of frozen or packaged foods will contain a lot of sodium.
