I sure hope you don't give up. You are worth the better you that will come from this journey. I have to starting eating veggies in the morning or I don't make it either. I do onions and mushrooms in eggs. I've done left over quiche with onions, spinach or what ever you put in. I like raw mushrooms dipped in Ranch Dressing, Frozen veggies are convenient. I steam brussel sprouts for dinner and the next day, heat some of the leftovers up for lunch or even breakfast. Big salads with mushrooms, onions, olives, feta cheese. Hope some of these suggestions work for you. Somedays, like today, I opened a can of spinach for lunch and ate that with a bit of vinegar on it. I do a bunch of frozen veggies because they are cheaper and quicker and with any leftovers I throw them into an omlet in the morning. Have a great day and good luck.:)
