my current challenge will be keeping carbs below 30 grams...but honestly, if i can achieve at least 50 grams, i will be super happy and pleased.

Remember, those are NET carbs for the challenge. Carbs minus fiber = net carbs. The more fibrous foods you eat, the more actual carbs you can have. I just went in and posted a Vegetable Nutrition Chart that shows the net carbs and fiber for many popular vegetables. Hope that helps!
