Nevermind. Just looked. Eggplant’s a nightshade. That’s why I don’t eat it and haven’t learned to!🤷🏻‍♀️

Sorry smprowett had not read your question. the aubergines or eggplant are smoked on the grill, the skin is removed, and then I liquefied with tahini, mayonnaise, garlic powder, salt a little olive oil and ready. It is low in carbs and a little to accompany sausages is very tasty. 😋😄

I was just reading about nightshade vegetables, smprowett you don't eat them at all? If so, why? I like yo learn about it. 🤗
