Happy*Snappy's Journal, 18 November 2017

This is my third morning weighing in at 280 point something so I decided to enter it. I weigh every day but only enter when I see a consistent loss ... hence the reason my weigh ins seem erratic. Going back to basics seems to have helped get through the 6 pound fluctuation I was struggling with.

I did a short term fast yesterday - I stopped eating at 2 pm and just broke the fast today at noon - so 22 hours.

Does anyone else find that those types of fasts on this plan (LCHF) seem to happen naturally? I could have eaten pizza with my family but didn't really want to - even a lc version wasnt tempting. I just wasnt interested.

I have cut back on my coffee / heavy whipping cream / vanilla syrup concoction......I only get to do that on special occasions. I stopped with the almond flour creations too and feel better...... I'm still working on eliminating the artificial sweeteners completely. I didn't think that would be as difficult as it's been. My blood sugars seem to be more affected by the almond flour than the artificial sweeteners but that could be wishful thinking on my part....I haven't taken the time to really look at the correlation between the numbers and my intake.

I think the almond flour creations were my way of keeping my love of baking alive. I hate to think of that as being an obsolete skill. My daughter's school hosted a competition for one of her clubs and we were asked to provide food etc. Whoo hoo I get to bake! 6 batches of brownies (made with dates and prunes), 8 batches of cinnamon rolls (whole wheat, psyllium and almond flour) 3 batches of fudge (coconut cream and lower sugar)and a pumpkin cake (totally low carb and grain/sugar free).

Nobody else has to eat what I eat but if I can "healthify" some of the standards then I will! When I came to pick up the trays / containers - they were ALL empty. I even had people ask for recipes.

I also made a variety tray for one guy who can't have gluten. My daughter said he usually can't eat at competitions because he's never sure what's in the food. I thought - Wow that's gotta suck for him.

Anyway - I've been logging my intake on paper and when I can I log it here or if I don't have my log with me then I enter here so I can remember what to log on paper. I have trouble getting some of my foods to match with what's on the nutritional listings here. Like today - chicken sausage (mine 1 carb each) - the only option on the search here is 1 carb for 2 sausages. I just entered double to match what I know to be my carb count since that is what I'm watching most closely. Not super accurate but I get what I'm doing and I have the paper copy to peruse when needed.

I also entered my egg salad as being eaten at one meal which isn't the case but it's easier to track that way - I may eat the rest of it later (or maybe not). ☺

Read the label on your Almond Flour. I bought one assuming it was low in carbs after I opened it I noticed the net carb count was 4 g per 2 TBS. ouch...

I will have to check that again.... if I remember correctly it was 2 gm NC per 1/4 cup.
