Had a good weekend. Didn't get everything I wanted to done. But I ended up doing some more in depth cleaning around the house. My very pregnant friend visited on Saturday, and she was going to spend the night, but she kept having irregular contractions, so she went home. She had her baby Sunday Evening at 7pm. I did feed her some really good food while she was there, and we just talked and relax. :)

My oldest daughter had a friends spend the night, and hang out and play til Saturday afternoon. Then When it was time to pick her up, her mom brought her other 3 kids, so it was a full and busy house for an hour or two. :)

I cooked Chicken and gnocchi soup Saturday night, most of it from leftovers throughout the week. 1 left over chicken thigh, a handful of mixed light and dark meat from rotisserie chicken, 1.25 large chicken breasts I had slow cooked. Chicken stock from the slow cooked chicken too went in. I sautéed celery, onion and carrots in a little butter salt and pepper before adding them to the soup. Let some of the onions caramelize. Maded full use of the spice rack, cracked pepper, and this parmesan bread seasoning, garlic powder (forgot to buy fresh garlic at the store.) It turned out really well. My picky 8yr old even went back for 2nds. :)

Sunday Morning my daughter and I toasted old fashioned oats with a little cinnamon, roasted pepitas in the oven, and had greek yogurt topped with strawberries, pepitas and toasted oats. It was delicious and my daughter really enjoyed helping to make it. :) She's really growing up too fast.

Sunday night I cooked little baby potato medley, beautiful colors. I had marinated a cut of beef over night, and I seared it on the stove top, and finished it in the oven and made salad with a thai inspired dressing (soy sauce, ginger, basil, and some roasted red pepper dressing as a base). It was so good, and I will admit, that I only guestimated my portions in my food journal. My husband finally came home from helping in Southern Florida with Hurricane Irma victims. So we had cause to celebrate....with a generous helping of beef! MMmmmm. lol.

Oh and the scale went down 4lbs on Saturday. I like to weigh in the morning, but I only update the weight tracker every few days or so. I'm probably just going to update it on Saturday or Sunday from here on out. I sleep later those days and weigh in usually lighter those mornings. lol.

So all good things. This next weekend will be filled with Family time, and maybe visiting my friend and her new baby if she feels up for visitors. :) This week will hold an appointment with the ENT about removing my tonsils and possibly fixing my deviated septum later this year. Picking up some clothes I had ordered at the mall. Staying on track with making better food choices, and trying to get some planned exercise in at some point.
