Saturday night -- and I'm cooking a rather unusual meal since it involves beef! I couldn't resist: Sirloin tip roast on sale for $5.99/pound. My housemates are in shock, because I generally only cook roast beef on Christmas day, and then it's a doozie -- a giant standing rib roast that practically requires that I sell the house to pay for it. Anyway, not only am I making roast beef, but I have inaugurated my new Spiralizer with sweet potatoes. I don't very often buy cooking equipment, in part because my kitchen and storage are so small. But I have been fantasizing about a Spiralizer and a griddle for the past few months. Whole Foods has been selling these spiralized sweet potatoes that you can make in the oven, and they are so very delicious, and also I love the idea of making zucchini noodles. And then there's the griddle -- I've become addicted to my buckwheat pancakes, so I wanted a griddle. The Spiralizer arrived last week and it worked great tonight. The griddle was supposedly delivered to my front door on Wednesday, but it never actually got to me, so Williams Sonoma is sending a new one. I really want it before Thanksgiving... so I can make a nice breakfast for my sister. I am starting to get Thanksgiving under control -- figuring out what I'm actually cooking and what I'm buying prepared. I start cooking on Monday -- making a sweet potato casserole that can be frozen and thawed on Thanksgiving Day. Over next weekend I'm going to make 2 batches of my now famous caramel butter pecan ice cream, which leaves me making pumpkin cheesecake on Tuesday. I know I'll get it all done, but it feels a bit overwhelming at the moment. At least I'll be working hard and burning off calories!
