Strawberri -- your progres is amazing. You should be really proud of yourself. I know the vegetable thing can be really hard if you don't generally like them. But try to experiment a bit. Your idea to mix spinach into your salad is great -- also try throwing in some arugula, which is one of the most nutrient intensive foods you can eat. Also, remember that legumes count as a veggie serving, and they have fiber and protein. I take a couple of cans of black beans, drained, throw in a can of chopped tomatoes, a chopped onion, and some chili powder and simmer them for about an hour. Then I freeze in 1/3 cup portions in silicon muffin cups. Once they're frozen, you can pop them out of the muffin cups and store in a zip lock. Micro one at a time. With green beans, I put a little bit of walnut oil in a deep skillet and throw in about 1/2 ounce of walnut pieces. When the walnuts start to brown, I put in the green beans and toss them with some taragon -- cook them just until the skins start to brown a bit, but the green beans stay crisp. These are really delicious, and walnuts are really really good for you. Another thing people forget is a vegetable is onions. Very often, to substitute for potatoes, I get a big sweet onion (the Vidalias are in the stores now), split it, sprinkle a bit of olive oil on, and broil it. You can also broil tomatoes this way. If you like, right before they're done, sprinkle on a bit of parmesan cheese. And one last thing -- take a look at some of the cauliflower puree recipes on FS. Lots of people like me eating low carb high protein use this to sub for a starch, and many people who generally dislike cauliflower really like the puree. Good luck to you.
