I cut up a (refrigerated) watermelon after dinner then forgot about it until bedtime. 3 hours at room temp (68 degrees). Cool to the touch but anything not body temp would be, I realize. I know the cutoff is usually 2 hours but since it has come from the fridge would that have helped buy more time? I hate wasting money/food but it’s not worth getting sick of course. Any food safety experts out there care to chime in?

In the before time (pre-SAHMhood), I was a food safety auditor/educator. Did you wash/scrub the melon thoroughly before cutting? Contamination is introduced via the rind; cut a dirty melon and you introduce everything on the surface into the meat. So long as the surface was cleaned properly, you should be okay.

Allegra I think you are so awesome and this new bio detail only for there that belief. You truly are a a fount of info! Yea, I did wash it well :) Hunby ate the rest and experienced no issue.
