Not recording weight today. Since I had to get up, dressed, eat and out the door pretty quick. I registered my little girl for the Early headstart program. So I'm hoping she gets in! *fingers crossed* I won't know anything til I get a letter in the mail from them in June. -__- They should really let you know sooner than that. I could go back to work if she was in school too. Which would be fantastic!

Anywho, not much on going on today. The registration was my primary concern. We'll probably go to the park later today and do the walking thing. :P Laundry,cooking,housework.

So made my first risotto today, and just happened to see this great idea for making a risotto cake with the leftovers. Make into patty, roll in panko, little olive oil in the pan, and crispy sides. :) Highly thinking of swaping out my chicken soup dinner, in favor of Ground turkey risotto cakes...hrm...

haha-I could almost hear you say "Hrmm" as u hold finger to your chin.Yes-quite the dilemma.We are having chicken soup here for dinner too.Which is making the house smell nummy.What would be better is if I could make some dinner rolls.OH WELL!!!I've never had an inclination to make risotto-to be honest i dont know what it is (rice?)-lol.Thats funny coming from me cuz I love all those reality cooking shows like Top Chef,Food Network Challenge and Hells Kitchen.Sometimes when Im in my kitchen I put on my Julia Child accent and tell the empty room what Im going to do next with my cooking.haha-good times.ANYway-I'd go with the turkey rissoto cakes cuz it sounds like they'd be better fresh, and freeze the soup for another rainy day :)

lol. Well I got Ground turkey risotto made. Didn't even think about it having to cool so I could make it into 'cakes' Soo we just had risotto. Made WAY too much too. haha. So I'll make it into cakes tomorrow night. ^.^ Wiki definition: Risotto is a class of Italian dishes of rice cooked in broth to a creamy consistency. The broth may be meat-based, fish-based, or vegetable-based; many kinds include Parmesan cheese, butter, and onion. It is one of the most common ways of cooking rice in Italy. What I made wasn't quite creamy but very very soft. Used 1/2 chicken broth when I made the rice and sauteed the veggies in chicken broth and butter too. ;) Then mixed it all together and stirred shredded Itallian blend cheese til it was googey. ^.^ Soo yummy. Can't wait to Panko it. :3 I love panko, it's like something fried without all the grease. Woot! And since I'm down south, I guess I should say Risotto fritters. lol. My sister is the food network addict, but I enjoy watching it too. ;) And have only recently become more adventurous where food is concerned.

Gooey=Good.Nuff said ;D .And I thought everything down south was 'grits'?Up here everything is 'hotdish' .

Panko is wonderful, i add it to a baked penne and it just makes the dish fantastic!

Grits are AWESOME You know grits stands for: Girls Raised In The South. ;) Grits is breakfast food here. Savory version of Oatmeal(nasty nasty stuff), or Cream of wheat(again nasty stuff. lol.) What's 'hotdish' refer too?? O.O I've never heard of that. I do know that we say Soda, and other places say 'Pop'. ^.^ @Pixi I'm a Believer in Panko!! Mmm. I even like it by itself crisped up with a little butter and some seasonings. O.O Mmmmm bready crispy yummy... :P On another note, I'm a glutton for punishment. Walked 3.1 miles today, then when Jules went to bed at 9, I put on the 30 day shred and did the level 1 workout. And boy do I feel pumped. lol. Waiting for the exercise high to crash, then Bed. :3 5:45 wake up, and 3 miles in the park and back in the house maybe before hubs and Jules wakes up. ^.^
