Yay! I've definitely caught something. I caught the wild yeast. My sourdough starter has started. The little monster is doing well. Have to be careful with the little critter right now. It's blowing off hooch quite well. Love sourdough bread. It's an entirely different thing to commercial yeast leavened bread. I just hope it's nice and strong.

I'll try it tonight with oatmeal pancakes. Everything goes in now but the baking powder. I hate pitching half while it's starting, which is the normally recommended practice. I'll split it, put together the pancake batter, and then feed and water the little guy and set him in a sunny window. I'll make him happy.

A wild yeast is a non-commercial yeast. There's some debate as to where it resides. Some say that yeast is in the air all around us. I'm not sure I agree. I think it's in the flour we use if it hasn't been over processed. When I'm trying to 'catch' a yeast, I usually put a couple tablespoons of every kind of grain I can find in the mix. White, multi-grain (likely a pretty good bet by itself), rye, grind up some oats... whatever. Then any kind of water but tapwater. Anything filtered or bottled. Mix water/grain 50:50 and let it stand for a day in a sunny window (unless the temp in your home is already about 75 degrees F). Each day, put in a few tablespoons of water and white flour. You don't need to add the other grains again. The white flour is just to feed the yeast if it's there. It should get bubbly after a few days. You can smell if it goes 'bad'. It usually bad if there's an odour but no hooch (clear liquid) floating on top. I'll have to look for my sourdough recipe. Adding vinegar to regular bread can give you a sourdough taste... sort of... but you don't get a fermented grain bread by using vinegar instead of a sourdough starter. Sourdough breads take longer to make since the yeast is not as potent as commercial yeast.

I dabbled around with natural sourdough and catching wild yeasts, about 2-3 years ago. You give me the itch to do it again. The flavor is like nothing else... And good for the digestion too. Thanks for the inspiration :D
