salad rolls with shrimp for tonight

These are really simple to make! You can fill them with pretty much anything you like but I'll list the classic ingredients. There are a lot of great recipes on youtube :) For peanut dipping sauce: 1 tbsp peanut butter 2 tbsp hoisin sauce 1 tbsp lime juice 1 clove minced garlic half tbsp sambaal or sriracha 1.5 tbsp water Combine ingredients and mix. Spring roll ingredients: -Rice paper sheets -rice vermicelli noodles -lettuce -thinly sliced cucumber -shredded or thinly sliced carrot -fresh mint, basil & cilantro -bean sprouts -peeled/deveined shrimp (ham or marinated tofu are great too) To make the rolls: -bring a pot of water to boil. kill the heat and add shrimp. put a lid on and let them cook for 2-3 minutes. drain and place them in cold water -when shrimp is cool enough to handle, slice each one in half horizontally -cook rice vermicelli noodles according to package. drain and rinse with cold water -prepare a dish of warm water. dip one sheet of rice paper into the water for several seconds then lay it on a plate or cutting board. it will still feel stiff at first but will soften as it sits and absorbs water -time to add veggies! I usually start with a lettuce leaf then stack on some noodles, cucumber, bean sprouts & herbs and roll it up in the lettuce to help keep everything contained. make sure to place the veggies an inch or two from the top of the rice paper and leave about 2 inches on the sides. -place 3-4 halves of shrimp alongside the vegetables. place shrimp orange side down so it will show through the wrapper -fold the sides over first, then start from the top and roll tightly. Thats it :)
