Thank you!! It was very filling! Cooked the chicken, yellow red and purple bell peppers, onions, yellow squash, and a few fairytale eggplants in coconut oil with seasonings and a little water. Added on top of black beans. Topped with fresh tomatoes, green onions, and a little shredded sharp cheddar cheese! Also not pictured is the guacamole I made with the fresh tomatoes!!
