Hubby ate cake yesterday. Had about 170g carbs. And gained weight. So far he’s lost on less than 100g. Fluke?

I’d welcome any quick and easy Keto recipes! Feel free to give me any recipe names in this post and I’ll look them up. I can’t get things like almond flour, avocado oil etc as my kitchen is packed but I have olive oil, sesame oil and the like. Even picked up cabbage and ground ginger as several recipes I’ve seen calls for things like that. A small kitchen, 5 people and 3 different ways of eating doesn’t mix well! All canned goods over flowed to my laundry room and now I’m out of space there and my fridge. :-/

Good low carb fresh foods to have on hand would be welcome as well! He’s eating chicken quarters with either a tomato or avocado almost every meal. I say fast because I have to cook 2-3 meals and eat in 30-60 minutes starting next week. Practices, games and such put us home about an hour before bedtime 😳.

Oh and he’s not fond of lettuce wraps. He’s keeping protein up around 180-250g, usually on the lower side of that. Meat is a must for him.

I know - I never follow instructions - why change today? Almond flour. One small bag. Makes a huge difference in carbs. Chocolate keto mug cake. 2tbs almond flour, 1 tbs pure cocoa, 1\4 tsp baking powder, 1 egg, 1 tbs coconut oil or butter, a couple drops of vanilla. Stir well, microwave 1 minute. Is it as rich and delicious as butter frosting bakery cake? NO. But with sugar free strawberry preserves or some swerve confectioner sugar (both low carb) he could whip up a little 'dessert' in less than 3 mins to satisfy a sweet craving.

3-4 grams of water are gained per gram of carb.

Keto crack slaw is good because you can use a variety of proteins. Egg, cheddar, bacon, and spinach breakfast cups are great for a meal on the go. Nuts, string cheese, pork rinds and pepperoni slices are good for snacks.

Thanks Bella. I’ll ask him. Not sure if he will want to try sweets as he’s sworn them off minus the one piece of birthday cake. Chris, I’ll see if he wants that. Sounds easy enough ;) thanks.

Thanks D and dhawk. When I told him that he seemed to relax a bit! Joleen, he hates muffin frittatas. He loves the crack slaw though! I’ll see if he wants some pork rinds. We already have string cheese and nuts. I’d better stay away from pepperoni as he would eat it all in a sitting. Thanks :).

Cook some cut up bacon ( I use kitchen shears to cut) Drain and add cut up cabbage. Cook the cabbage down... Remive from stove...addfullfat sour cream and some stevia... taste to determine how much stevia. Delicious.

He doesn’t use sweeteners but I have Splenda so I’ll see if he will try it. He’s had it in tea a few times but normally won’t use anything. Thanks for the idea!
