Yum! I think I’ll make something like this on Monday minus the guacamole. I have 3 dozen eggs to use and I can’t boil them because I have a dozen boiled for hubby’s snacks.

I do that too. I made double the taco meat as usual just so I could have taco soup. I plan to save a bit back to put in some quesadillas too maybe.
