Well, I kicked myself out of ketosis yesterday! My brother made his fantastic taco salad last night and I couldn't resist!! Everything in it was okay, but then you eat it with tortilla chips. I made sure to count the chips and stick to one serving, but I still went over my usual 20C and I'm sure the corn in the chips didn't help.

Good news is that today it hit me that I could eat his taco salad in a low carb tortilla instead of using the chips. So I did that for dinner tonight and it was wonderful!!! Once again, I find that making a simple adaption in one of my favorite dishes is possible without compromising the dish!!! I LOVE ATKINS!!

So, I'm doing better today and hoping to be back in ketosis again in a few days.

BREAKFAST
1 cup of coffee with h/c = 0C
chicken salad on a bed of greens = 3C

LUNCH
1/2 cup of strawberries and cream = 3C
1 cup of cauliflower with butter and cheese = 4C
1 beef stick = 0C

DINNER
l low carb tortilla = 4C
taco salad = 2C

SNACKS
1 serving of sugar free pudding = 3C

TOTAL = 19C

I love taco salad. I always added doritos to mine and I do miss them when I make it but I make the cheese chips out of american cheese slices and sub them. Its still yummy! Mexican food is soo a weakness. lol

Good thinking on eating the taco salad with the low carb tortilla. Those low carb tortillas are wonderful. You're doing great! :)
