1 13.6 oz can of unsweetened coconut milk (Thai kitchen)
1 cup half and half (Organic Valley)
2 tbs cold water
1 envelope gelatin (Knox)
2 tsp vanilla extract (McCormick)
1/4 tsp liquid stevia (Trader Joe’s)
In a cold sauce pan, add the gelatin to the cold water. Mix for one minute then add heat. Stir. Heat the coconut milk and half and half in microwave until hot. When gelatin turns clear, mix in the milk and half and half. Add vanilla and stevia. Taste and add extra stevia if needed. Pour everything into 4 ramekins, I used round Pyrex containers. You can split it into 6 containers to reduce calories and carbs, but I like my dessert. Refrigerate until set.
