steffyjohnk, buckwheat is a healthy carb. Cooked buckwheat groats contain about 20% carbs.

I thought to myself, well I've never had buckwheats or beet salad before so I will at least try it maybe this weekend but then I noticed you didn't say whether it was any good or not HAHAHAHA.
