I've been going off the diet quite a bit. My definite problem is that it takes so long when I come in from work to fix a filling and healthy meal that I just eat what is quick (like sugar-free pudding and lite cool whip). Very miserable, too many calories too much of the time. ALL my own fault.
Also since I moved last, I can't find my George Forman grill which made my life amazingly simple when cooking on this food journey.
Yesterday was Sunday so I cooked fried squash and eggplant (not together) in a pan coated with olive oil and then baked turkey meatballs. I added a little homemade spaghetti sauce to the eggplant and melted parmesan and mozzarella cheese over the top. I even made enough for todays lunch. That's what I need to do every Sunday. It was delish, as Rachel would say.
I don't give up.
138.0 lb Lost so far: 12.0 lb.    Still to go: 10.0 lb.    Diet followed poorly.

The eggplant pizza recipe on this site is actually better left over than it was fresh...just an idea on something to make on sunday to eat during the week.
