The myth that carbohydrates convert to fat so easily is still so widespread.

First of all, you need a calorie surplus to gain fat. Second, if you do overfeed with carbohydrates you will actually gain less fat than if you overfeed with fat. The reasons are that the thermic effect of carbohydrates is higher than it is with fat, dietary fat is easily converted to body fat, and the process of de novo lipogenesis is costly to the body. There will be an energy waste to convert carbs to fat.

De novo lipogenesis (DNL) is a complex and highly regulated metabolic pathway. In normal conditions, DNL converts excess carbohydrates into fatty acids that are then esterified to storage triacylglycerols (TGs).

^Rarely or almost never occurs. To force this process, you would need to overfeed with carbohydrates AND do it while having a very low-fat diet. This is because your body would rather oxidize the carbs for energy, or store it in your glycogen stores while storing the dietary fat instead.

The bottom line is that insulin does not deserve the bad reputation that it has been given, and the "carbohydrates drive insulin which drives fat storage" mantra is wrong. To summarize:

•Insulin suppresses appetite; it does not increase it

•Insulin levels are not predictive of weight gain or weight loss in the majority of prospective studies
•Exenatide restores rapid phase insulin release in diabetics, yet causes weight loss
•The effects of insulin injection cannot be compared to normal physiological insulin release, since amylin is co-secreted with insulin from the pancreas
•Insulin mainly functions as an inhibitory hormone rather than a storage hormone, acting as a brake on many important physiologic processes
•A type I diabetic without insulin becomes hyperglycemic because of overproduction of glucose by the liver, not because insulin can't get into cells
•Insulin enhances the uptake of glucose into cells, but is not required for it
•Insulin regulates blood sugar after a meal both by stopping the liver from producing glucose and enhancing glucose uptake into cells.
•In a fasted state, insulin regulates blood sugar by controlling glucose production of the liver, not by affecting the uptake of glucose into cells
•You cannot simply look at the temporary effects of insulin on lipolysis and glucose storage.
•You have to address what is happening over a 24-hour period; body fat will not increase if there is no overall energy surplus."

I love carbs. Not that any of crap media cranks out stopped me from much. What I've learned is take what you read with a grain of salt and listen to your body. It's much more intelligent than agenda driven information.

Thank you for this post!! As a 15/16 year old, my dad became a Atkins Authoritarian. He forced my 13/14 yr old obese brother on ithu low carb diet, then i followed after he understood it. My senior year of high school, I argued with my weightlifting coach about carbs, i was wrong, but that was how 'brainwashed' i was in the information. Now, i struggle with eating disorders after 14 years of believing i HAVE to be low carb. Restricting/omitting an entire food group has its consequences. And last year, with degenerative spinal stenosis and 2 herniated disc, i was on the Carnivore bandwagon... I was trying to have NO inflammation coming from diet; i was in so much pain. After a few days of carnivore, i would BINGE HEAVILY on chocolate, ice cream all junk food... Needless to say my back is healed, i weighed 191lbs@ 5'3 after i could finally walk. I'm addressing my eating disorders; it's a big breath of relief to finally look at carbs and not feel like they're "bad foods". My goal has been to get back to my WT when competitively boxing: 125# or around there
